Ingredients
1 tablespoon of olive oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 pound of boneless, skinless chicken breast, diced
4 cups of chicken broth
1 cup of heavy cream
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauteing until soft and fragrant.
